Persian Oyster Mushroom Curry

I made this today during my hour lunch break. It took me 20 minutes and it was absolutely delicious. It’s the perfect warmer for this drastic change of temperature we’re experiencing in the UK right now and may help your body constitution to adjust and reduce the chance of getting ill.

It contains tender-stem broccoli which scientists have discovered has more cancer preventing glucosilonates than regular broccoli and is easier to digest. It also contains chillies, which aid circulation and warm the body, lower the risk of cancer, help clear congestion, reduce the sensation of pain and reduce inflammation and oyster mushrooms which are known to have immune boosting and anti-bacterial properties.

Almonds add essential good fats and minerals such as magnesium which can help reduce migraines, muscle cramps, insomnia and anxiety. The fats in cashews may actually help to reduce the chance of heart disease as they contain similar fats to those found in olive oil.
The spices that have been added aid digestion greatly, allowing more of these delicious nutrients to be absorbed.


  • 100g tender stem broccoli or purple sprouting broccoli, roughly chopped
  • 160g oyster mushrooms
  • 1 tbsp of coconut oil
  • 1 red onion, chopped finely
  • 2 cloves of garlic, chopped finely
  • A knob of peeled fresh ginger, chopped finely
  • 1 dessert spoon of vegetable bouillon
  • 1-1.5 teaspoon Kofte spices
  • 1/2 cup filtered water
  • 8 almonds
  • 15 cashews
  • Small handful pre-cooked spelt (Merchant Gourmet)

Heat the oil in a pan on low temperature.

Add the onion, stir a little then add the garlic and ginger.

Cook a little then add the broccoli.

Add the water followed by the bouillon and spices, raise the temperature until there is bubbling around the edges then let simmer for a few minutes.

Continue to stir then add the mushrooms whole.

Stir for a few more minutes.

Add the spelt to a large bowl then pour the stir-soup on top. Enjoy!
